About accomodation

I'll be arriving to Georgia on the 25th of december and leaving on new year. We are thinking of going to Tetnuldi but the lifts might not be done yet so we might have to go to Gudauri instead. My question is that is it difficult to find accomodation in Gudauri if we decide to change plans. What I mean is booking a hotel like a week before we arrive. Will it work out or is everything full if we don't book in advance?
